1. Cook the Pasta
Bring a large pot of salted water to a boil. Add ¾ pound of pasta and cook until al dente. Reserve a cup of the pasta cooking water before draining.
2. Mix Pasta with Pesto
Drain the pasta and immediately toss it with 1½ cups of pesto. If needed, add up to ½ cup of the reserved pasta water to achieve a glossy, well-coated texture.
3. Serve with Parmesan
Divide the pasta among four serving plates and sprinkle with freshly grated Parmesan cheese.
4. Optional Variations
Consider adding sliced tomatoes, or introduce green beans or cubed potatoes during the last minute of the pasta's cooking time for added texture and flavor.
