1. Cook Potatoes
Start by peeling and cutting the potatoes into large pieces. Place them in a pot of salted boiling water and cook until they are soft enough to be easily pierced with a fork. This usually takes about 12-15 minutes.
2. Mash Potatoes
Once the potatoes are tender, drain them thoroughly. Pass them through a ricer or food mill, or simply mash them right in the pot with a potato masher. Stir in 2 tablespoons of butter until it melts and blends in.
3. Cook Celery Root
Peel the celery root and slice it thinly. In a heavy-bottomed pan, melt 3 tablespoons of butter over medium-low heat. Add the sliced celery root along with a pinch of salt. Cover the pan and cook until the celery root is tender, which should take another 12-15 minutes. Stir occasionally to prevent browning, and lower the heat if needed.
4. Combine and Adjust Consistency
For a smoother texture, pass the cooked celery root through a food mill, or blend it to make a purée. Stir this into the mashed potatoes, combining the flavors and textures into a cohesive mix. If the mash seems too thick, thin it out with a little milk until you reach your desired consistency.
5. Taste and Serve
Taste the mash and adjust the seasoning by adding more salt if necessary. Your savory celery root and potato mash is now ready to serve. Enjoy!
Roast a head of garlic and squeeze the soft cloves into the mash for a sweet, caramelized garlic flavor.
Stir in grated cheese such as sharp cheddar, Gruyère, or Parmesan for a cheesy twist. You could also top the mash with cheese and broil it for a gratin-like crust.
Enhance the flavor by adding fresh herbs such as thyme, rosemary, or sage. You can either mix them into the mash or infuse the cream with the herbs for a subtler taste.
Add prepared horseradish to the mash for a pungent kick that pairs especially well with beef dishes.
Mix in crispy bacon bits, chopped green onions, and sour cream for a loaded baked potato-style mash.
