    How to Make Creamy Spinach and Paneer

    1. Prep Spinach

    In a food processor, pulse spinach in batches until finely chopped, avoiding overfilling to ensure even consistency. Expect about 3 cups minced spinach.

    2. Cook Paneer

    Heat 1 tbsp ghee in a large nonstick skillet over medium heat. Cook paneer, turning occasionally, until golden brown, about 5 to 7 minutes. Remove paneer and set aside.

    3. Sauté Aromatics

    In the same skillet, reduce heat to medium-low. Add remaining ghee with onions, season with salt and pepper, and cook until soft, about 5 minutes.

    4. Add Flavor

    Stir in ginger, garlic, and chile, cooking for 1 minute. Blend in coriander and cumin.

    5. Combine and Cook

    Add minced spinach and 1/2 cup water, increase heat to medium, season again, and cook until spinach is tender and most liquid is absorbed, about 8 minutes.

    6. Finish Dish

    Stir in heavy cream and paneer until fully combined, adjust seasoning as necessary.
