1. Prepare the Zucchini
Place the zucchini slices in a colander and generously sprinkle them with pink salt. Let them drain over the sink for 30 minutes to remove excess moisture.
2. Melt Brie and Butter
In a small saucepan over medium-low heat, melt the Brie cheese together with the butter, stirring until they blend into a smooth mixture.
3. Preheat the Oven
Preheat your oven to 400°F.
4. Arrange Zucchini and Add Brie Mixture
Once the zucchini has drained, arrange the slices neatly in an 8-inch baking dish, then season them lightly with freshly ground black pepper. Pour the melted Brie and butter mixture evenly over the zucchini slices, making sure they are well-coated.
5. Add Gruyère and Pork Rinds
Sprinkle the shredded Gruyère cheese over the top. Evenly distribute the crushed pork rinds over the cheese.
6. Bake the Gratin
Place the baking dish in the oven and bake for 25 minutes, or until the gratin is bubbling and the top is nicely browned.
