    How to Make Zucchini with Mint and Garlic

    1. Prepare and Season Zucchini

    Slice the zucchini evenly and place them in a bowl. Drizzle with 2 tablespoons of extra-virgin olive oil and sprinkle with ¾ teaspoon of kosher salt. Toss to coat.

    2. Broil Zucchini

    Arrange the seasoned zucchini slices on baking sheets in a single layer and place under a preheated broiler. Broil for about 5 minutes on each side, watching carefully to avoid burning.

    3. Toss with Garlic and Mint

    Remove the zucchini from the broiler and transfer back to the bowl. Add minced garlic and chopped mint or basil. Toss gently and drizzle with more olive oil. Add salt to taste and serve immediately.
