    How to Make Crispy Roasted Broccolini with Aged White Cheddar

    1. Preheat Oven

    Preheat your oven to 400 degrees.

    2. Prepare Broccolini

    Prepare the broccolini by removing and discarding the bottom half of the stems, then cut the remaining stems in half or quarters and pull apart the florets.

    3. Season Broccolini

    Place the broccolini on a sheet pan. Drizzle about 4 tablespoons of good olive oil over the broccolini, then season it with 1 teaspoon of kosher salt and 0.5 teaspoons of freshly ground black pepper. Toss everything well to ensure that the broccolini is evenly coated.

    4. Roast Broccolini

    Spread the broccolini out in one layer on the sheet pan, then roast it in the oven for 10 minutes. Use a metal spatula to toss the broccolini once during roasting.

    5. Add Cheddar

    While the broccolini is roasting, slice 6 ounces of aged white Cheddar into 0.25 inch thick pieces and then break them into large crumbles. After the broccolini has roasted for 10 minutes, sprinkle the cheese over the top and return the pan to the oven for an additional 3-4 minutes, just until the cheese has melted.

    6. Finish and Serve

    Once the cheese has melted, remove the broccolini from the oven and squeeze the juice of half a lemon over it. Taste and adjust the seasoning if necessary. Serve immediately and enjoy.
