1. Sauté Vegetables
Melt 2 tablespoons of butter in a large skillet over medium heat. Add a small diced onion and one diced red bell pepper to the skillet. Sauté these vegetables until the onion becomes translucent and slightly browned, which will take a few minutes.
2. Cook Corn and Lima Beans
Add 2 cups each of corn kernels and lima beans to the skillet, maintaining medium heat. Cook for about 10 to 15 minutes, stirring occasionally, until the vegetables are tender.
3. Season and Serve
Season the vegetable mixture with salt and pepper to taste, stirring to ensure even distribution. Serve the succotash immediately while it's warm.
