How to Make Savory Vegan Mushroom Gravy

1. Sautéing the Base

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the finely chopped onion and mushrooms. Cook, stirring frequently, until the mixture is well browned, about 8 to 10 minutes.

2. Creating the Roux

Reduce heat to medium. Sprinkle the flour over the cooked onion and mushrooms. Continue to cook, stirring constantly, until the mixture turns golden brown, approximately 3 to 5 minutes.

3. Whisking in Stock

Gradually whisk in the vegetable stock, adding it slowly to prevent lumps and continue to whisk until a smooth sauce begins to form. Allow the gravy to simmer for an additional 2 to 3 minutes or until it has thickened to your liking.

4. Seasoning and Finishing

Season the gravy with soy sauce, kosher salt, and black pepper. Adjust the seasoning to your taste if necessary. For a smoother gravy, you can pass the mixture through a fine mesh strainer, although this step is optional.
