How to Make Winter Roasted Tomatoes

1. Prepare Baking Dish

Preheat your oven to 275°F. Pour olive oil into a shallow earthenware dish to coat the bottom. Spread the diced onion, sliced garlic, and fresh herb leaves evenly across the dish.

2. Season and Arrange Tomatoes

Season the onion and garlic mixture with a pinch of salt. Arrange the drained whole tomatoes over the bed of onions and herbs. Season the tomatoes with salt, freshly ground black pepper, and sprinkle a little sugar over the top. Drizzle more olive oil over the tomatoes.

3. Roast Tomatoes

Bake the tomatoes in the preheated oven, uncovered, for 4 to 5 hours until they look deeply roasted and slightly shriveled.

4. Serve

Remove the dish from the oven and let it cool slightly. Coarsely cut the roasted tomatoes and serve them warm.
