1. Prepare Tomatoes
Start by peeling, seeding, and dicing 2 pounds of ripe tomatoes. Save the juice from the tomatoes, strain out the seeds, and add the juice back to your diced tomatoes.
2. Prepare Garlic
Peel, smash, and chop 5 large garlic cloves.
3. Heat Oil and Garlic
Heat a heavy-bottomed pot over medium heat, then add ¼ cup of extra-virgin olive oil. Once the oil is hot, add the chopped garlic. When the garlic starts to sizzle and becomes fragrant, but not browned, it’s time to add the tomatoes along with their juice and a large pinch of salt.
4. Simmer Sauce
Let the mixture simmer for about 15 minutes. This simmering time allows the flavors to meld together beautifully, creating a rich and flavorful sauce. If you prefer an even smoother consistency, you can pass the sauce through a food mill at this point.
