1. Press Tofu
Wrap the tofu in kitchen towels or paper towels, place a plate on top, and weigh it down with a heavy object for about 10 to 30 minutes to squeeze out excess moisture.
2. Prepare Starch Mixture
In a large, wide bowl, whisk together potato starch, kosher salt, and freshly cracked black pepper. Coat the tofu thoroughly with this mixture.
3. Air Fry Tofu
Spray the air fryer basket with nonstick cooking spray. Place the tofu in the basket and spray it as well. Cook at 375 degrees for 10 minutes, toss gently, and cook for another 10 minutes until golden brown and crispy.
4. Make Glaze
In a small skillet, combine brown sugar, rice vinegar, low-sodium soy sauce, and sambal oelek. Cook over medium heat for about 5 minutes until the mixture thickens into a glaze.
5. Coat Tofu with Glaze
Toss the air-fried tofu in the sweet and spicy glaze, ensuring each piece is well-coated. Garnish with sliced scallions.
Go for extra-firm tofu to ensure a crisp exterior. Firm tofu can work, but extra-firm holds shape better under pressure and cooking.
Arrange tofu cubes in a single layer without overcrowding to maintain airflow and ensure crispiness on all sides.
Properly drain and press your tofu to remove excess moisture. Use a tofu press or sandwich the tofu between plates with a heavy object on top for at least 30 minutes.
After the tofu cubes are perfectly crispy, quickly toss them in the warm glaze to coat evenly without soaking too much.
Before air frying, lightly coat the tofu pieces with a mixture of cornstarch, salt, pepper, and maybe a pinch of garlic or onion powder. Cornstarch is crucial for creating a crispy crust.
