A delicious and smoky tempeh dish that is perfect as a side or a main course.
1. Prepare the marinade
Whisk together the vegetable broth, soy sauce, apple cider vinegar, liquid smoke, olive oil, pure maple syrup, and crushed garlic in a bowl.
2. Cut and simmer the tempeh
Cut the tempeh in half widthwise, then slice each half diagonally to form four large triangles. Add the tempeh triangles to a pot of boiling water and reduce to a simmer. Let them simmer for about 10 minutes.
3. Marinate the tempeh
Remove the tempeh and let it cool slightly before placing it in the bowl with the marinade. Ensure the tempeh is fully immersed in the marinade, flipping the pieces occasionally to coat all sides. Let the tempeh marinate for at least an hour.
4. Grill the tempeh
Preheat a cast-iron grill pan over medium-high heat, lightly greasing it with olive oil. Once the pan is hot, place the marinated tempeh triangles on the grill pan. Grill them for about 5 minutes on each side, and just before the second side is done, spoon some extra marinade over the triangles.
