How to Make Roasted Yams with Spiced Honey and Lime Yogurt

1. Prepare and Roast Yams

Preheat your oven to 425°F. Toss the yams in a large bowl with honey, half a tablespoon of Espelette pepper, and two tablespoons of olive oil. Spread them on a foil-lined baking sheet, sprinkle with kosher salt and black pepper. Roast for 30 to 35 minutes until caramelized and fork-tender.

2. Prepare Lime Yogurt Sauce

While the yams are roasting, whisk together Greek-style yogurt, the remaining tablespoon of olive oil, and fresh lime juice in a small bowl until smooth.

3. Garnish and Serve

Arrange the roasted yams on a serving platter, drizzle with the lime yogurt sauce, and sprinkle with the remaining Espelette pepper and sliced scallions. Optionally, add a light sprinkle of sea salt to finish.
