How to Make Roasted Sweet Potato & Pear Medley with Pecans and Raisins

1. Preheat the Oven

Preheat your oven to 350°F so it's ready when you need it.

2. Prepare Sweet Potatoes and Pears

Place the sweet potato and pear chunks on a large, rimmed baking sheet. Drizzle them with the vegetable oil and mirin, then gently toss to ensure everything is evenly coated.

3. Add Seasonings and Pecans

Add the maple syrup, ground cinnamon, and salt to the mixture on the baking sheet. Scatter the pecan halves over the top. Toss everything together, making sure the flavors are well distributed and the pecans are mixed in.

4. Bake with Foil

Cover the baking sheet with aluminum foil and place it in the preheated oven. Bake for 30 minutes to allow the sweet potatoes and pears to start softening and absorbing the flavors.

5. Add Raisins and Continue Baking

After 30 minutes, remove the foil and gently add the golden raisins to the mixture. Use a thin, flexible spatula to carefully toss everything. This gentle tossing helps keep the sweet potatoes intact while ensuring even distribution of the raisins.

6. Finish Baking

Return the baking sheet to the oven and bake uncovered for another 30 minutes. Toss occasionally to promote even browning. You’ll know it’s ready when the edges of the sweet potatoes and pears are lightly browned and caramelized.
