1. Prep Veggies and Herbs
Preheat the oven to 375°F (190°C). In a large skillet over medium heat, melt 4 tablespoons of butter. Add the onion, celery, apples, chestnuts, a pinch of salt, and black pepper. Stir in thyme, sage, Worcestershire, and hot-pepper sauce. Cook for about 5 minutes until softened.
2. Combine with Bread
Transfer the cooked mixture to a large bowl. Fold in the bread pieces, beaten eggs, and parsley. Gradually add enough stock to moisten well. Taste and adjust the seasoning as needed.
3. Bake
Use the remaining tablespoon of butter to grease a baking dish. Transfer the dressing into the dish and bake uncovered for 30 minutes, or until the top is golden brown. If the interior isn't moist, drizzle additional stock and return to the oven for another 5-10 minutes.
