    How to Make Garlicky Chive and Egg Stir-Fry

    1. Beat the Eggs

    Crack the six extra-large eggs into a bowl. Add one tablespoon of peanut oil, half a teaspoon of salt, and a pinch of white pepper. Beat the eggs until everything is well blended.

    2. Stir-Fry the Chives

    Heat a wok over medium-high heat and add two tablespoons of peanut oil along with an eighth of a teaspoon of salt. Once the oil is hot, add the fresh Chinese chives. Stir-fry them for about one to one and a half minutes until they turn bright green.

    3. Scramble the Eggs with Chives

    Give the beaten eggs a quick stir and pour them into the wok with the chives. Scramble the eggs gently, mixing them with the chives as they cook. Continue scrambling until the eggs reach your preferred level of doneness.

    4. Serve Immediately

    Turn off the heat and transfer the stir-fry to a serving dish immediately to ensure the eggs stay perfectly cooked.
