How to Make Crispy Okra & Caramelized Shallot Stir-Fry

1. Prepare Okra

Trim the stems and tips off the okra and slice them into ¼-inch pieces. This should yield about 3 cups.

2. Heat Oil and Add Turmeric

Heat a wok or a wide heavy skillet over medium-high heat. Once hot, pour in the peanut oil and stir in the turmeric, allowing the oil to become infused with a warm, earthy flavor.

3. Caramelize Shallots
