1. Wash Spinach
Thoroughly wash the spinach under cold water until the water runs clear.
2. Blanch Spinach
Bring a large pot or wok of water to a rolling boil. Add 1.5 teaspoons of vegetable oil to the boiling water, then carefully add half of the spinach. Blanch the spinach for 30 to 40 seconds, just until it is tender and bright green. Use a skimmer or slotted spoon to transfer the spinach to a colander to drain. Repeat with the remaining spinach, using another 1.5 teaspoons of vegetable oil.
3. Prepare Sesame Sauce
In a bowl, combine the sesame paste, pale rice vinegar, soy sauce, minced garlic, sugar, kosher salt, and toasted sesame oil. Stir until smooth and creamy. If the sauce is too thick, add a small amount of hot water to reach the desired consistency.
4. Press and Cut Spinach
Once the spinach has drained, press out any excess water with your hands. Lay the spinach out on a cutting board and cut it into 3-inch lengths.
5. Assemble the Dish
Place the spinach in a serving bowl and pour the sesame sauce over it. Mix gently to coat all the spinach evenly. Sprinkle the crushed peanuts or toasted pine nuts on top. Garnish with thinly sliced fresh red chile, if desired.
