1. Preheat Oven and Prepare Peaches
Begin by preheating your oven to 350 degrees. While the oven is warming up, prepare your peaches. If you are using fresh peaches, peel, pit, and slice them. Fresh peaches ensure the best flavor, so look for ones that are ripe and juicy.
2. Cook Peach Mixture
Melt 4 tablespoons of butter in a medium saucepan over medium heat. Once the butter has melted, add the sliced peaches, 1/2 cup of granulated sugar, and 2 tablespoons of flour. Cook this mixture for about 10 to 15 minutes, until the peaches are tender and the mixture has thickened to a syrupy consistency.
3. Prepare Batter
In a medium bowl, combine the remaining 1 cup of granulated sugar, the remaining 1 cup of flour, baking powder, and fine sea salt. Stir in the milk until you have a smooth batter.
4. Melt Butter in Baking Pan
Place the remaining 8 tablespoons of butter in a 9-by-13-inch baking pan, and melt it in the oven.
5. Add Batter to Pan
Once the butter has melted, pour the batter into the pan, but be sure to reserve about 1/3 cup of the batter for later. Spread the batter evenly, but don’t worry if it doesn’t fully cover the bottom of the pan; this will help the batter rise better.
6. Add Peach Mixture and Reserved Batter
Spoon the peach mixture evenly over the batter in the pan. Then, dollop the reserved batter on top of the peach mixture. This will create a lovely, rustic appearance once baked.
7. Bake the Dessert
Bake in the preheated oven for about 1 hour, until the top is golden brown and crisp. The baking process will ensure a delightful, golden crisp surface that is the hallmark of a good cobbler.
8. Serve and Enjoy
Once baked, remove from the oven and let it cool slightly before serving. If desired, serve warm with a scoop of vanilla ice cream to complement the peach delight.
Stewed apples with cinnamon and nutmeg, paired with a buttery shortbread crust and a vanilla custard or cream cheese layer, finished with a streusel topping or caramel drizzle.
Fresh mango slices or mango puree with a touch of lime, coconut-flavored crust, coconut cream or light mascarpone layer, and toasted coconut flakes with lime zest garnish.
Swap peaches for a mix of berries and consider a lemon-infused whipped cream to complement the tanginess of the berries.
Pumpkin puree with pie spices, gingersnap crust, spiced whipped cream or pumpkin spice cream cheese layer, topped with cinnamon and toasted pecans.
Cherry filling or simmered cherries with an almond-flavored crust, almond-scented whipped cream or almond cream cheese, garnished with slivered almonds and dark chocolate.
Select ripe, in-season peaches that are juicy and full of flavor. If fresh peaches aren't available, opt for quality frozen peaches that have been thawed.
Use cold butter cut into small pieces for the crust and avoid overworking the dough to achieve a flaky and tender texture.
Allow the dessert to chill for several hours in the refrigerator to properly set and develop flavors.
Preheat your oven and use an oven thermometer to ensure the correct temperature. Bake the crust until golden before adding the filling to prevent sogginess.
Taste your peaches before adding sugar and adjust the quantity accordingly to prevent the dessert from being overly sweet.
