1. Cook Sausage
Place the sliced sausage in a large pot over medium heat. Let it cook for about 2 minutes until it starts to release its flavorful fat.
2. Add Onion
As the sausage begins to render its fat, add the chopped onion to the pot. Stir frequently and cook for another 2 minutes until the onion begins to soften and become translucent.
3. Add Potatoes and Garlic
Add the cubed potatoes and minced garlic to the pot. Continue stirring and cook for about 2 more minutes until the garlic becomes fragrant.
4. Add Kale
Add the chopped kale to the pot. Stir constantly for about 2 minutes until the kale begins to wilt.
