How to Make Hearty Ham and Pea Puree Soup

1. Soften the Onion

In a large saucepan, melt the knob of butter over medium heat until it starts to foam lightly. Gently cook the chopped onion until it is soft but not browned, stirring occasionally.

2. Infuse the Potato

Add the diced potato to the saucepan with the onion, stirring to coat it well with the butter. Pour in the ham or pork stock and bring the mixture to a simmer. Let it cook until the potato is tender.
