1. Roast the Poblano Chile
Roast the large fresh poblano chile in your oven or on a grill until the skin blisters and chars. Allow it to cool, then peel the skin off.
2. Saute the Onion
Heat a tablespoon of vegetable oil in a pot over medium heat. Add the sliced white onion and sauté until soft.
3. Cook Garlic and Add Main Ingredients
Add two peeled garlic cloves to the pot and cook until aromatic. Then add the roasted poblano chile, corn, and chicken breast. Cook until the chicken is thoroughly done.
