How to Make Sheet-Pan Sausage With Peppers and Tomatoes

    1. Preheat Broiler

Start by setting your broiler to heat, positioning the rack about 6 inches from the heat source.

    2. Score Sausages

Take your sausages and score them lightly on both sides to allow the fat to render out and help them cook more evenly.

    3. Prepare Ingredients

In a shallow baking dish or on a baking sheet, toss together the sausages, sliced peppers, cherry tomatoes, garlic, and shallots. Drizzle with the extra-virgin olive oil, then season generously with kosher salt and freshly ground pepper. Spread the ingredients out in an even layer.

    4. Broil Ingredients

Place the baking dish under the broiler. Broil for about 10 to 15 minutes, rotating the pan and stirring occasionally to ensure even charring and cooking. If the vegetables char too quickly, cover the dish loosely with foil.

    5. Serve

When the sausages are cooked through and the peppers and tomatoes are nicely charred, remove the dish from the broiler. Serve immediately.
