    How to Make Sesame Shrimp with Wilted Spinach

    1. Shrimp Prep

    Rinse shrimp in a colander, salt generously, and toss for a minute. Rinse again, drain, and pat dry with paper towels. Mix 1/4 to 1/2 teaspoon salt (to taste) with sugar in a small bowl; set aside.

    2. Wok Heating

    Preheat a 14-inch wok on high heat. Test with a water drop; it should evaporate in a second or two.

    3. Aromatics

    Swirl in 1 tablespoon oil, add garlic, ginger, and chili; stir-fry for up to 10 seconds.

    4. Add Shrimp

    Push aromatics aside, add shrimp in a single layer. Cook undisturbed for 1 minute, add remaining oil, and stir-fry for another minute.

    5. Spinach Toss

    Sprinkle in sesame seeds, add spinach, and stir-fry for 1 minute until starting to wilt unevenly.

    6. Final Season

    Evenly distribute salt and sugar mixture; continue to stir-fry until spinach is fully wilted but still vibrant, shrimp are cooked through, about 2 more minutes.

    7. Sesame Drizzle

    Remove from heat, drizzle with dark sesame oil, toss, and serve immediately with your choice of rice, noodles, or grains.
