How to Make Garlic & Herb Roasted Shrimp

1. Prepare Garlic-Oil Paste

Preheat your oven to 500°F (260°C). In a small food processor, combine the peeled garlic cloves and extra virgin olive oil. Blend until smooth, making sure to scrape down the sides as needed.

2. Make Herb Mixture

To the garlic-oil paste, add the chopped scallions and parsley. Pulse until the mixture is finely minced.

3. Toss Shrimp with Mixture

In a large bowl, toss the peeled shrimp with the garlic-herb mixture, seasoning with salt, pepper, and your choice of dried chilies or chili flakes.

4. Roast the Shrimp

Spread the seasoned shrimp in a large roasting pan. Pour your choice of stock, wine, or water over the shrimp. Place the pan in the heated oven.

5. Cook Until Done

Roast the shrimp, stirring once midway, until the sauce is bubbly, the shrimp have turned pink, and are cooked through, approximately 10 to 15 minutes.
