1. Preheat Oven
Preheat your oven to 350°F.
2. Prepare Bread Crumbs
In a food processor, pulse the torn bread quarters along with the melted butter, salt, and pepper until you have fine crumbs.
3. Bake Bread Crumbs
Spread these crumbs evenly on a rimmed baking sheet and bake them on the middle rack for about 15 minutes until golden brown.
4. Cool and Mix Bread Crumbs
Once the crumbs are a beautiful golden brown, allow them to cool. Then, combine them with the minced parsley and shallot in a pie plate.
5. Prepare Egg Batter
In a medium bowl, whisk together the eggs, mayonnaise, horseradish, paprika, and cayenne pepper. Gradually whisk in ¼ cup of flour until smooth and well combined.

8. Bake Fish
Increase the oven temperature to 425°F. Spray a wire rack with vegetable oil spray and set it over a baking sheet. Place the coated fish pieces on the rack and bake them in the oven for 18 to 25 minutes, or until the fish registers 140°F on an instant-read thermometer.
