How to Make Honey Walnut Shrimp

1. Candy the Walnuts

Heat some neutral oil in a small saucepan over medium heat. Once the oil is hot, fry the walnut halves until they turn golden brown and crispy, which should take about 3 to 4 minutes. Drain the walnuts on a parchment-lined sheet pan. In the same saucepan, combine the sugar, water, and a pinch of salt, then bring it to a simmer. Stir until the sugar dissolves and the mixture thickens slightly, which should take around 5 minutes. Toss the fried walnuts in this syrup until they are well coated and glossy, then spread them out on the parchment to cool.

2. Prepare the Shrimp

In a mixing bowl, combine the shrimp with Shaoxing wine, toasted sesame oil, fine sea salt, and white pepper powder, ensuring each shrimp is well seasoned. Dredge the seasoned shrimp in cornstarch, making sure they are evenly coated.

3. Make the Mayonnaise Sauce

Mix the sweetened condensed milk, honey, rice vinegar, and a pinch of salt in a microwaveable bowl. Heat the mixture in the microwave for about 15 seconds, just enough to blend the flavors. Stir in the room-temperature mayonnaise until the sauce is smooth and well combined.

4. Cook the Broccoli

Bring a pot of water to a boil, then add a teaspoon of salt and oil. Blanch the broccoli florets in the boiling water for about 30 seconds, until they are bright green and slightly tender. Immediately transfer the broccoli to a bowl of cold water to stop the cooking process, then drain well.

5. Fry the Shrimp

Heat enough neutral oil in a deep pan or fryer to cover the shrimp. Once the oil is hot, dredge the shrimp in cornstarch again to ensure a crisp coating and fry them for about 2 to 3 minutes, until they are golden and cooked through. Drain the fried shrimp on paper towels to remove any excess oil.

6. Assemble the Dish

In a large bowl, pour the mayonnaise sauce over the fried shrimp and toss them gently to coat. Arrange the steamed broccoli on a serving dish, then place the shrimp on top. Scatter the candied walnuts over the shrimp and broccoli. Serve immediately and enjoy the perfect balance of crispy, sweet, and savory flavors.
