1. Combine Shrimp with Seasonings
Combine the shrimp with the baking soda, kosher salt, and sugar in a large bowl. Toss the shrimp until they are well-coated.
2. Thread Shrimp on Skewers
Thread the shrimp onto sets of two skewers, fitting about six shrimp per set. Lay the skewered shrimp over a baking dish and refrigerate them for about an hour.
3. Prepare Garlic-Oil Mixtures
In a small bowl, combine half of the minced garlic with half of the olive oil. In a separate large bowl, mix the remaining garlic with the remaining olive oil, lemon zest, lemon juice, and parsley. Set these mixtures aside.
4. Preheat Grill
Light your charcoal grill and arrange the coals, or if using a gas grill, set the burners to high and preheat for about 10 minutes. Clean and oil the grilling grate to prevent sticking.
5. Grill the Shrimp
Brush the shrimp with the garlic-oil mixture from the small bowl. Place the skewers on the grill and cook them, turning occasionally, for about 4 to 5 minutes in total. The direct heat will char the shrimp.
6. Toss Shrimp in Lemon-Garlic Mixture
Remove the skewers and toss the shrimp in the large bowl with the garlic-oil-lemon mixture, coating them thoroughly.
7. Season and Serve
Season the shrimp with salt and freshly ground black pepper to taste, and serve them immediately.
