1. Prepare Jalapeño
Remove the seeds and veins from one jalapeño pepper, roughly chop it, and set it aside. This step controls the heat of the sauce.
2. Prepare Garlic and Spices
Peel five garlic cloves and measure out two teaspoons each of ground cumin and ground coriander, along with one teaspoon of mustard seeds.
3. Gather Fresh Herbs
Gather one and a half cups each of fresh parsley, mint, and cilantro. Add half a teaspoon of sea salt.
4. Add Vinegar and Lime
Add two tablespoons of rice vinegar, along with the zest and juice of one lime.
5. Blend the Sauce
Place all the prepared ingredients into a blender or food processor. Pour in a third of a cup of olive oil and a quarter cup of water. Blend until smooth and bright green.
