    How to Make Classic Tartar Sauce

    1. Prepare Base

    In a mixing bowl, combine the egg yolk, white wine vinegar, water, and a pinch of salt. Whisk them together until well blended.

    2. Emulsify Olive Oil

    Pour the olive oil into a cup with a spout. Begin whisking the egg yolk mixture steadily, and slowly drizzle the olive oil into it. Continue whisking and adding oil until the sauce thickens and becomes opaque.

    3. Add Flavorings

    Stir in the chopped capers, cornichon or gherkin, parsley, tarragon, chives, and chervil. Mix well and then season with salt and fresh-ground black pepper, to taste.

    4. Rest and Serve

    Let the tartar sauce rest for about 30 minutes before serving to allow the flavors to meld together.
