1. Preheat Oven and Prepare Glaze
Preheat the oven to 400 degrees. In a small saucepan, whisk together honey, thinly sliced jalapeños, apple cider vinegar, and soy sauce. Bring to a gentle boil, then simmer for about 10 minutes until the glaze thickens enough to coat a spoon.
2. Prepare Salmon Fillets
Pat salmon fillets dry with paper towels. Brush a baking pan with olive oil and also brush the salmon with it. Season each fillet with a pinch of kosher salt.
3. Glaze and Roast Salmon
Drizzle the prepared jalapeño honey glaze over the salmon fillets, spooning extra on top. Place in the oven and roast for 6 minutes. After 6 minutes, baste the salmon again with the glaze and roast for another 6 to 8 minutes until the salmon is slightly rare in the center.
4. Serve the Roasted Salmon
Transfer the salmon to a serving dish, spoon any remaining glaze over the top, squeeze lime juice, and sprinkle with a pinch more salt if needed. Garnish with chopped fresh cilantro.
