How to Make Tomato and Pomegranate Salad with Za'atar and Herbs

    1. Prepare Tomatoes

Halve or quarter the tomatoes depending on their size to release some of their juices.

    2. Make Za'atar Dressing

In a small bowl, whisk together the za'atar with 1.5 tablespoons of extra-virgin olive oil.

    3. Combine Salad Ingredients

In a large mixing bowl, toss together the prepared tomatoes, pomegranate seeds, thinly sliced yellow bell pepper, and thinly sliced red onion. Add torn basil and mint leaves, pour in the remaining 2 tablespoons of olive oil, drizzle with lemon juice, and sprinkle with flaky sea salt to taste.

    4. Add Cheese and Dress

Transfer the salad to a platter, scatter manouri or feta cheese over the top, and drizzle with the za'atar and olive oil mixture.
