1. Make Dressing
In a small jar or container with a tight-fitting lid, combine the extra virgin olive oil, sherry vinegar, Dijon mustard, and honey. Shake vigorously until well blended and an emulsion forms.
2. Dress Salad
Massage the kale for a couple minutes to break it down. Sprinkle the golden raisins and toasted slivered almonds over the greens, adding a pinch of salt and chili flakes if using. Pour about a third of the dressing over the salad and toss gently to coat all the ingredients. Taste the salad for seasoning and adjust with salt or more dressing if needed. Divide between plates and serve.
