How to Make Green Bean Salad with Red Onion and Salsa Dressing

1. Steaming the Green Beans

Steam 12 ounces (about 5 cups) of fresh green beans until tender-crunchy. Let them cool to room temperature and drain off any excess water.

2. Preparing the Salsa Dressing

In a blender or food processor, combine 3/4 cup of vegetable oil with 1/2 cup of bottled salsa and 2 tablespoons of fresh lime juice. Blend until smooth.

3. Seasoning the Dressing

Stir 1/4 cup of chopped cilantro into the blended dressing, and season generously with salt.

4. Assembling the Salad

Combine the cooled green beans with the thinly sliced red onion in a salad bowl. Drizzle with about 1/3 cup of the dressing and toss gently. Season with more salt if needed.
