How to Make Kale Salad With Apples and Cheddar

1. Prepare the Kale

Wash the kale thoroughly to remove any dirt. Once clean, dry the leaves well using a salad spinner or a clean kitchen towel.

2. Strip and Tear Kale

Strip the kale leaves from their tough stems and tear the leaves into bite-sized pieces. Place them into a large bowl.

3. Massage the Kale

Drizzle a tablespoon of olive oil and a pinch of salt over the kale leaves. Using your hands, gently massage the kale for about two to three minutes until the leaves darken in color and become more tender.

4. Prepare Apple and Cheddar

Core and thinly slice the apple. Cut the aged cheddar cheese into small cubes.

5. Combine Ingredients

Combine the apple slices and cheddar cubes with the massaged kale.

6. Dress the Salad

Squeeze the juice of half a lemon over the salad, and season with freshly ground black pepper and a bit more salt if needed. Toss everything together gently.

7. Serve

Serve your kale salad immediately or let it sit for a few minutes to allow the ingredients to meld together.

Variations

Protein-Enhanced Salad

Transform the salad into a more substantial meal by adding a protein such as grilled chicken, sliced steak, chickpeas, or tofu.

Grilled Chicken or Tofu

Add grilled chicken strips or marinated tofu for a heartier meal.

Different Greens

Swap kale for spinach, arugula, or a spring mix to offer different flavors and textures.

Citrus Vinaigrette

Brighten up the salad with a mix of lemon and orange juice and a hint of zest.

Cheese Alternatives

Replace cheddar with feta, goat cheese, blue cheese, or shaved Parmesan for a range of tangy to pungent flavors.

Pitfalls and tips

Ensure a good mix of textures

crisp apple, creamy cheddar, crunchy nuts, and chewy kale.
