1. Preheat and Prepare Ingredients
Preheat your oven to 375ºF. Grate the Yukon potatoes and onion into a large bowl, then drain off excess liquid.
2. Prepare Baking Dish
Place an 8- or 9-inch baking dish in the oven for 5 minutes, then add ¼ cup of neutral oil and return to the oven for another 10 minutes.
3. Combine Eggs and Potato Mixture
Whisk the eggs until well beaten, then add them to the potato-onion mixture and stir until combined.
4. Add Herbs, Seasoning, and Flour
Fold in the salt, ground black pepper, parsley, dill, scallions, flour, and remaining ¼ cup of oil into the potato mixture.
5. Bake the Kugel
Carefully transfer the mixture into the hot, oiled baking dish and bake for about 1 hour, or until the top is golden brown and bubbly.
