How to Make Potato Kugel

1. Preheat Oven and Prepare Potatoes

Preheat the oven to 350°F (175°C). Place the russet potatoes in a bowl of cold water to prevent discoloration while preparing other ingredients.

2. Whisk Eggs and Seasonings

In a large mixing bowl, whisk the eggs gently and season with kosher salt and black pepper.

3. Grate Onion and Combine with Eggs

Grate the medium onion and add it to the egg mixture, stirring to combine.

4. Grate Potatoes and Mix with Egg Mixture

Grate the potatoes and mix them immediately with the egg and onion mixture to prevent discoloration.

5. Add Oil, Flour, and Baking Powder

Fold in the vegetable oil, flour, and baking powder into the potato mixture.

6. Prepare Baking Pan and Add Mixture

Grease a 9-by-9-inch baking pan or a 10-inch cast-iron skillet with vegetable oil, then pour in the potato mixture.

7. Bake the Kugel

Bake the kugel in the preheated oven for 2 hours, or until the top is a deep golden brown and the kugel is cooked through.
