Deliciously crispy smashed potatoes seasoned with fresh thyme.

1. Preheat Oven
Adjust your oven racks to the top and bottom positions, then preheat your oven to 500 degrees F.
2. Prepare Potatoes
Arrange the scrubbed Red Bliss potatoes on a rimmed baking sheet. Pour ¾ cup of water into the baking sheet and tightly cover it with aluminum foil.
3. Steam Potatoes
Place the covered baking sheet on the bottom rack of your preheated oven and let the potatoes steam for 25 to 30 minutes. You’ll know they’re ready when a paring knife or skewer slips in and out of the potatoes with ease—poke through the foil to test.
4. Cool and Dry Potatoes
Once the potatoes are tender, remove the foil and let them cool for about 10 minutes. If there’s any residual water, blot the potatoes dry with a paper towel.
5. Coat Potatoes with Olive Oil
Drizzle 3 tablespoons of olive oil over the potatoes and gently roll them around to ensure they are well coated.
6. Smash Potatoes
Using a second baking sheet, press down firmly on each potato to flatten them to a thickness of about 1/3 to 1/2 inch.
7. Season Potatoes
Sprinkle the flattened potatoes with the chopped fresh thyme leaves and season generously with kosher salt and ground black pepper. Drizzle the remaining 3 tablespoons of olive oil over them.
8. Roast Potatoes
Move the baking sheet to the top rack and roast the potatoes for 15 minutes. After this initial roasting, transfer the baking sheet to the bottom rack and continue roasting for another 20 to 30 minutes, or until the potatoes are well browned and irresistibly crispy.
9. Serve Immediately
Serve these crispy thyme roasted smashed potatoes immediately while they're hot and enjoy the delightful combination of textures and flavors.
Mince fresh garlic or use garlic powder to sprinkle over the potatoes along with the other seasonings. Roasted garlic cloves can also be added on top for a sweet and mellow garlic flavor.
After the potatoes are smashed and before they go into the oven, sprinkle them with grated Parmesan, cheddar, or your favorite melty cheese. The cheese will become crispy and create an additional layer of flavor.
Finely grate Parmesan cheese over the potatoes just before their final roast for a cheesy, crispy topping.
Add crushed red pepper flakes, cayenne pepper, or diced jalapeños before roasting for a spicy twist. A dash of smoked paprika can also add a nice warmth and depth.
Replace thyme with other herbs such as rosemary, oregano, or a blend of Italian seasoning. Fresh herbs will give a vibrant flavor, while dried herbs are more convenient and provide a concentrated taste.
