A delicious Indian snack made with spiced mashed potatoes, formed into patties and shallow fried to golden perfection.

1. Potato Mashing
Start by boiling the potatoes until they are completely soft. Once boiled, peel and mash them until no lumps remain.
2. Mixing Spices
To the mashed potatoes, add the finely chopped coriander leaves, minced green chilies, red chili powder, garam masala, and salt. Mix until all ingredients are well combined.
3. Binding
Sprinkle the cornstarch over the spiced potato mixture and knead it in to help bind the patties together.
4. Patty Forming
Divide the mixture into equal portions, shaping them into round, flat patties.
5. Shallow Frying
Heat oil in a pan over medium heat. Once hot, place the patties in the pan and fry until they are golden brown and crispy on both sides. Be sure to turn them gently to prevent breaking.
