1. Prepare and Drain Potatoes and Onion
Grate the potatoes and onion, then transfer the mixture into a clean dishtowel over a large bowl. Wring out as much liquid as possible to ensure crispiness in the latkes.
2. Mix Latke Ingredients
In the large bowl, stir together the drained potato-onion mixture with the lightly beaten eggs, breadcrumbs, salt, and black pepper until well combined.
3. Fry Latkes
Heat the neutral oil in a medium, heavy-bottomed skillet over medium-high heat. Spoon the potato mixture into the skillet, and flatten slightly to form discs. Fry until golden brown on each side.
4. Drain and Serve
