How to Make Crispy Golden Latkes

1. Prepare and Drain Potatoes and Onion

Grate the potatoes and onion, then transfer the mixture into a clean dishtowel over a large bowl. Wring out as much liquid as possible to ensure crispiness in the latkes.

2. Mix Latke Ingredients

In the large bowl, stir together the drained potato-onion mixture with the lightly beaten eggs, breadcrumbs, salt, and black pepper until well combined.

3. Fry Latkes

Heat the neutral oil in a medium, heavy-bottomed skillet over medium-high heat. Spoon the potato mixture into the skillet, and flatten slightly to form discs. Fry until golden brown on each side.

4. Drain and Serve

Transfer the cooked latkes to a paper-towel-lined plate to drain. Serve hot with sour cream and applesauce on the side.
