How to Make Savory Pork-Stuffed Beefsteak Tomatoes

1. Preheat Oven

Preheat your oven to 400°F (200°C).

2. Prepare Tomatoes

Slice off the stem ends of the tomatoes to create lids. Shave the insides of these lids to make room for the stuffing later on. With a pointed teaspoon, carefully scoop out the tomato pulp and seeds, setting them aside for another use.

3. Cook Onion and Pork

Heat the olive oil in a skillet over medium heat and fry the chopped onion until it turns golden. Add the ground pork to the skillet, seasoning it with salt and pepper. Cook for 5-8 minutes, stirring and breaking up the pork until it is no longer pink.

4. Blend Ingredients

Transfer the cooked pork and onions into a food processor. Add the chopped jamón serrano or prosciutto and the hard-boiled egg quarters. Blend everything into a smooth paste, ensuring an even distribution of flavors and a consistent texture.

5. Stuff Tomatoes

Firmly stuff the hollowed-out tomatoes with the pork mixture and cover them with the shaved lids. Arrange the stuffed tomatoes in a baking dish.

6. Bake
