1. Preheat Oven
Preheat your oven to 375°F. Generously coat a 9-by-13-inch baking pan with butter to ensure the frittata doesn’t stick.
2. Prepare Egg Mixture
Crack the eight large eggs into a large bowl. Add the cup of heavy cream and whisk them together vigorously until the mixture is smooth and well combined. Season this mixture with a pinch of pink salt and a few grinds of black pepper.
3. Combine and Pour
Pour the egg and cream mixture into the prepared baking pan, making sure it's evenly spread.
4. Add Pancetta
Take the chopped pancetta and sprinkle it evenly over the egg mixture.
5. Add Prosciutto and Dill
Tear the thin slices of prosciutto into smaller pieces and scatter them across the top of the frittata, followed by a sprinkling of chopped fresh dill.
6. Bake Frittata
Place the baking pan in the preheated oven and let it bake for about 25 minutes, until the edges turn golden and the eggs are just set in the center.
7. Cool and Serve
Remove the frittata from the oven and transfer the pan to a cooling rack. Allow it to cool for about 5 minutes, then cut into portions and serve hot.
Opt for farm-fresh eggs, artisanal or locally produced pork sausage, and high-quality bacon. Use freshly grated cheese over pre-packaged for better melting and flavor.
Start on the stovetop and finish in the oven. Don't overcook; the frittata should be just set with a slightly jiggly center.
Whisk eggs thoroughly until homogenous. Incorporate crème fraîche or full-fat sour cream for creaminess. Season with salt, pepper, and a pinch of nutmeg or paprika.
Render bacon slowly over medium-low heat for crispiness. Ensure sausage is fully cooked and browned. Drain excess grease on a paper towel.
Use a well-seasoned cast-iron skillet or a non-stick oven-proof pan for even heat distribution and easy release.
