How to Make Rustic Spanish Polenta with Optional Charcuterie Topping

1. Boil Water

Fill a large saucepan with 6.5 cups of water and bring it to a rolling boil.

2. Add Salt

Once the water is boiling, add 2 teaspoons of salt to the pot.

3. Add Polenta

Lower the heat to a gentle simmer, and then gradually stir in 2 cups of instant polenta, stirring constantly with a wooden spoon to prevent lumps.

4. Cook Polenta

Continue cooking the polenta, stirring continuously for about 5 to 8 minutes, until the polenta starts pulling away from the sides of the pan.

5. Add Butter

Stir in 2 tablespoons of unsalted butter until melted and well combined.

6. Serve

Serve the polenta in soup bowls and pass around very hot milk for everyone to pour on top if desired.

7. Optional Topping

Top with some charcuterie for a heartier meal if desired.
