Shredded Whole Milk Low-Moisture Mozzarella Cheese
0 oz
Finely Grated Parmesan Cheese, divided
0 oz

0 oz
Raw Sweet Or Hot Italian Sausage, formed into 1/2-inch balls
0 oz
Fresh Basil Leaves, roughly torn
each
1. Preheat Broiler
Begin by preheating your broiler and adjusting the oven rack so it's ready to go. The high heat from the broiler will quickly cook your toppings and melt the cheese evenly, giving you that perfect, bubbly finish.
2. Heat Oil and Prepare Tortilla
Next, heat the olive oil in a large cast iron skillet over high heat until it shimmers, then reduce the heat to medium. Wipe out any excess oil, then place the tortilla in the skillet with the rougher textured side facing down. This helps the tortilla crisp up nicely.
3. Add Sauce and Cheese
Spread the pizza sauce evenly over the tortilla, then sprinkle the mozzarella and half of the Parmesan cheese on top. Season lightly with kosher salt.
4. Add Vegetables and Meat
Add the diced yellow onion and green bell pepper, followed by the pepperoni and sausage balls. Scatter the torn basil leaves over everything.
5. Broil and Finish Cooking
Place the skillet under the broiler for 2 to 4 minutes, keeping a close eye on it. You'll know it's ready when the cheese is melted and starting to brown. If the edges need a bit more crispness, you can continue cooking on medium heat on the stovetop, swirling the pizza around in the skillet.
6. Serve
Remove the pizza from the oven and sprinkle the remaining Parmesan cheese on top. Use a small metal spatula to pry up the edges and check the bottom for your desired level of crispness. Once you're satisfied, slide the pizza onto a cutting board. Cut it into slices and serve immediately. Enjoy your crispy, delicious creation!
