    How to Make Crispy Skillet Tortilla Pizza

    1. Preheat Broiler

    Adjust your oven rack to be 6 to 8 inches below the broiler element and preheat the broiler on high.

    2. Heat Olive Oil

    Heat 1/2 teaspoon of extra-virgin olive oil in a large cast iron skillet over high heat until it shimmers. Once shimmering, reduce the heat to medium-low and carefully wipe out any excess oil using a paper towel.

    3. Prepare Tortilla

    Place the flour tortilla into the skillet with the rougher, textured side facing down.

    4. Add Sauce and Cheese

    Spread 1/4 cup of pizza sauce evenly over the tortilla. Evenly sprinkle the shredded mozzarella cheese and half of the grated Parmesan cheese over the sauce-covered tortilla. Lightly season with kosher salt.

    5. Add Basil and Drizzle Oil

    Scatter the roughly torn basil leaves over the top and drizzle lightly with a bit more olive oil.

    6. Broil Pizza

    Place the skillet under the preheated broiler and broil the pizza for 2 to 4 minutes. Keep a close eye on it during this time.

    7. Add Remaining Parmesan

    After broiling, carefully sprinkle the remaining Parmesan cheese over the pizza. If you prefer an extra-crispy tortilla, return the skillet to the stovetop over medium heat and cook for a few more minutes until the desired crispness is achieved.

    8. Serve Pizza

    Slide the pizza out of the skillet onto a cutting board. Cut it into slices and serve immediately while it's still hot and crispy.

    Mexican Pizza

    Use salsa, Mexican cheese, ground beef or chicken, jalapeños, cilantro, sour cream, and avocado.

    Margherita Pizza

    Use tomato sauce, fresh mozzarella, basil, a drizzle of olive oil, and a sprinkle of sea salt.

    BBQ Chicken Pizza

    Top with barbecue sauce, mozzarella, chicken, red onions, and cilantro.

    Breakfast Pizza

    Crack eggs onto the tortilla, add cheese, breakfast meats, and veggies like spinach or tomatoes.

    Vegetarian Delight

    Start with pesto or white garlic sauce, mozzarella and goat cheese, and a mix of vegetables like spinach, artichokes, and mushrooms.
