1. Prepare Basil Leaves
Pick the leaves from one bunch of basil until you have a lightly packed cup.
2. Pound Garlic and Salt
Take a garlic clove and a pinch of salt and pound them together in a mortar and pestle until they form a smooth paste.
3. Add Pine Nuts
Add 0.25 cup of lightly toasted pine nuts to the garlic and salt paste. Continue to pound until the nuts are fully integrated.
4. Mix Parmesan Cheese
Transfer the mixture into a bowl and add 0.25 cup of grated Parmesan cheese. Mix well.
5. Pound Basil Leaves
Coarsely chop the basil leaves and then pound them in the mortar until they transform into a smooth paste.
6. Combine Mixtures
Return the pine nut mixture to the mortar with the basil paste and pound them together until thoroughly combined.
7. Add Olive Oil
Gradually pour in 0.5 cup of extra-virgin olive oil while continuing to pound the mixture to ensure it emulsifies properly.
8. Adjust Seasoning
