How to Make Classic Oatmeal-Raisin Delights

1. Preheat Oven

Preheat your oven to 350°F and adjust the racks so that one is in the low position and the other is in the middle. This setup will help ensure even baking.

2. Beat Butter and Sugars

In a large bowl, beat the softened butter until it's creamy. Add both the light brown sugar and the granulated sugar. Continue beating until the mixture is pale and fluffy, which should take about 3 minutes.

3. Add Eggs

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

4. Combine Dry Ingredients

In a separate bowl, mix together the flour, salt, baking powder, and freshly ground nutmeg.

5. Combine Wet and Dry Ingredients

After scraping down the sides of your mixing bowl, add the dry mixture to the butter mixture. Mix on low speed until just combined, which should take about 30 seconds.

6. Add Oats and Raisins

Gradually add the rolled oats and raisins to the dough, mixing until they are just incorporated.

7. Form Cookies

Form the dough into balls about 2 inches in diameter and place them on large cookie sheets covered with parchment paper. You should end up with 16 to 20 cookies.

8. Bake Cookies

Bake the cookies in your preheated oven for 22 to 25 minutes, or until the edges are golden brown. Halfway through baking, turn the cookie sheets from front to back and switch them from top to bottom to promote even baking.

9. Cool Cookies

Once baked, slide the cookies on the parchment paper onto a cooling rack. Let them cool for at least 30 minutes before serving to ensure they set properly and achieve the perfect texture.

Variations

Chewy Chocolate Chip Oatmeal Cookies

Replace the raisins with chocolate chips or chunks. You can also add a tablespoon of milk to the dough to enhance the chewiness.

Substitute half of the raisins with chocolate chips or chunks. Dark chocolate will provide a rich contrast, while milk chocolate will give a sweeter, creamier profile.

Salted Caramel Twist

Drizzle or mix in salted caramel into your dough for a sweet and salty flavor profile. You could also add caramel bits along with the raisins.

Cranberry Walnut Oatmeal Cookies
