1. Preheat Oven and Prepare Pan
Preheat your oven to 350°F (180°C) and line a sheet pan with parchment paper.
2. Whisk Egg White and Sugar
In a large bowl, whisk the egg white until frothy, then gradually add the granulated sugar, continuing to whisk until well combined.
3. Coat Almonds with Mixture
Add the raw almonds, vanilla extract, ground cardamom, and sea salt to the bowl with the egg white and sugar mixture, stirring until the almonds are evenly coated.
4. Roast the Almonds
Spread the coated almonds on the prepared sheet pan in a single layer and roast in the oven for 15 to 20 minutes, stirring halfway through the cooking time.
5. Season with Flake Salt
Immediately after removing the almonds from the oven, sprinkle them with flake salt while still warm.
6. Cool and Crisp Almonds
Let the almonds cool completely on the sheet pan. If they are sticky after cooling, return them to the oven for an additional 5 to 10 minutes to crisp up.
