1. Noodle Preparation
Boil a large pot of water. Cook noodles until al dente, about 5 minutes. Drain, rinse with cold water, drain again, and toss with a splash of sesame oil.
2. Sauce Mixing
In a bowl, combine 2 tbsp sesame oil, soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic, and chile-garlic paste. Whisk well.
3. Combining and Serving
Pour the sauce over the noodles. Toss until evenly coated. Place noodles in a serving dish. Top with cucumber sticks and sprinkle with peanuts.
