    How to Make Beef & Broccoli Lo Mein

    1. Marinate the Beef

    In a small bowl, combine the sliced steak with 1/4 teaspoon of salt, 1/4 teaspoon of sugar, 1/8 teaspoon of ground black pepper, 1/2 teaspoon of Shaoxing wine, 1/2 teaspoon of light soy sauce, 1 teaspoon of vegetable oil, and 1/2 teaspoon of cornstarch. Use your fingers to mix everything thoroughly until the beef is evenly coated.

    2. Prepare the Sauce

    In another small bowl, stir together 1 tablespoon of sesame oil, 2 teaspoons of light soy sauce, 2 teaspoons of dark soy sauce, 1 tablespoon of oyster sauce, 1/4 teaspoon of salt, 1/4 teaspoon of sugar, 1 teaspoon of Shaoxing wine, and 1 tablespoon of water.

    3. Boil the Noodles

    Bring a large pot of water to a boil, add a generous pinch of kosher salt, and cook the lo mein noodles for about 3 minutes, until they are al dente. Drain the noodles in a colander and set them aside.

    4. Stir-Fry the Beef

    Heat 2 tablespoons of vegetable oil in a wok over high heat until it's shimmering. Add the marinated beef and cook for about 1 minute until it's lightly browned, then continue cooking for another 2 minutes until almost done.

    5. Stir-Fry the Broccoli

    In the same wok, add another tablespoon of vegetable oil and heat it until shimmering. Toss in the broccoli florets and stir-fry for about 30 seconds until they start to brown. Add a splash of water and a pinch of salt, then cover the wok and let the broccoli steam for 2 minutes.

    6. Combine All Ingredients

    Add the remaining tablespoon of vegetable oil to the wok and heat it until shimmering. Throw in the minced garlic and stir-fry for about 15 seconds until fragrant. Add the cooked noodles and stir-fry for 1 minute to heat them through. Pour in the prepared sauce and toss everything to coat the noodles evenly. Finally, add the broccoli and beef back into the wok, mixing well to combine all the ingredients. Stir-fry for another minute until everything is hot and well-mixed.

    Variations

    - Shrimp & Asparagus Lo Mein

    Swap beef for shrimp and broccoli for asparagus. Shrimp cooks quickly, so add it towards the end of the stir-frying process.

    - Spicy Szechuan Lo Mein

    Incorporate a spicy bean paste or chili oil into the sauce and use a protein that stands up to bold flavors, like beef or pork.

    - Chicken & Cashew Lo Mein

    Replace beef with diced chicken breast and add cashews for crunch. Adjust the cooking time for the chicken to ensure it's cooked through.

    3. Modify the Sauce

    . Add a tablespoon of oyster sauce for a deeper umami flavor. . Mix in a teaspoon of sesame oil for a nutty aroma. . Incorporate a dollop of chili paste or a few dashes of sriracha for a spicy kick.
